Juice of an ½ orange

Reduced-sodium soy sauce

Red bell pepper
thinly sliced

Bunch of collard greens
stems and tough ribs removed

Instructions
Whisk together orange juice, soy sauce, ginger, and chili flakes.
Heat oil in large skillet or wok over medium heat. Place chicken in pan and heat - stirring often - until done. Remove and set aside.
Add red pepper and scallions ; heat 1 minute.
Place collards in pan, in batches if necessary, and heat until just slightly wilted.
Return chicken to pan along with orange juice, and heat 1 minute. Serve garnished with pumpkin seeds.
