Ingredients
  

  • ½ C Water
  • 1 C Green Grapes
  • 1 Orange, peeled, halved
  • ½ Ripe Bartlett pear, seeded, halved
  • 1 Small to medium sized banana, peeled
  • 1 C Kale
  • 2 C Ice Cubes

Equipment

  • Vitamix

Method
 

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 45 seconds or until desired consistency is reached.

Collard Green Coleslaw

Collard Green Coleslaw

Ingredients
  

Dressing
  • 1 C mayonnaise
  • ¼ C apple cider vinegar
  • 3 Tbsp stone ground mustard
  • 2 Tbsp kosher salt
  • 1 Tbsp freshly ground black pepper
Coleslaw
  • 3 C shredded white cabbage
  • 2 C julienned collard greens
  • 1 C julienned carrots
  • ¼ C thinly sliced white onion
  • ¼ C thinly sliced green onion
  • 2 lemons, juiced
  • kosher salt and freshly grund black pepper

Method
 

For Dressing:
  1. In a bowl, mix the mayonnaise, vinegar, mustard, salt, and pepper - and reserve.
For Coleslaw:
  1. In a large bowl, mix the cabbage, collard greens, carrots, onions, and green onions.
  2. Pour half of the dressing over the slaw and mix by hand. Add more dressing to taste.
  3. Mix in the lemon juice and refrigerate for 2 hours before serving.
  4. Season with salt and pepper before serving

When One Closes Another Opens

It is said that when one door closes, another opens. And, sometimes it is more than one open door. I closed the door to my personal training business, Positive Vibes Fitness, in April 2018. It was an emotional closure, but it was necessary. While I dearly miss all the members, I don’t miss working IN the business as much as I did. I now have the time to do a lot of  things I wasn’t able to do.

  • I’ve been traveling the country and the world – as close as Virginia Beach to as far as Australia.
  • I’ve been helping my son grow his custom cake and bakery business, Sweet Heat Culinary Creations.
  • I have had the opportunity to focus on my photography. In addition to doing some local shoots, portraits, events, sports – my vacations are just photoshoots. Some of my trips have been for the sole purpose of photography.
  • I started a passion project, Life at F11. My website is a platform for to share my love of reading, photography, art, and traveling.
  • I’ve had time to work on DC’s Observations: Random Thoughts & Philosophical Musings. They are posted every Friday, and I’ve done a few giveaways.
  • My most recent endeavor is starting a residential cleaning business, Maid Karma.

Chicken Collard Stir Fry

Chicken Collard Stir Fry

Ingredients
  

  • 1 lb Chicken Breast chopped
  • Juice of an ½ orange
  • 2 tbsp Reduced-sodium soy sauce
  • 2 tsp Sesame Oil
  • 1 tbsp Finely chopped ginger
  • ¼ tsp Red Chili Flakes
  • 2 tbsp Grapeseed or canola oil
  • 1 Red bell pepper thinly sliced
  • 2 Scallions thinly sliced
  • 1 Bunch of collard greens stems and tough ribs removed
  • ¼ C. Unsalted roasted pumpkin Seeds

Equipment

  • Wok

Method
 

  1. Whisk together orange juice, soy sauce, ginger, and chili flakes.
  2. Heat oil in large skillet or wok over medium heat. Place chicken in pan and heat - stirring often - until done. Remove and set aside.
  3. Add red pepper and scallions ; heat 1 minute.
  4. Place collards in pan, in batches if necessary, and heat until just slightly wilted.
  5. Return chicken to pan along with orange juice, and heat 1 minute. Serve garnished with pumpkin seeds.
