Method
- Whisk together orange juice, soy sauce, ginger, and chili flakes.
- Heat oil in large skillet or wok over medium heat. Place chicken in pan and heat - stirring often - until done. Remove and set aside.
- Add red pepper and scallions ; heat 1 minute.
- Place collards in pan, in batches if necessary, and heat until just slightly wilted.
- Return chicken to pan along with orange juice, and heat 1 minute. Serve garnished with pumpkin seeds.
